The Sultana's Premium Sella Basmati Rice 1121 is the parboiled version of our extra-long Basmati from Punjab. In the traditional Sella process, the rice is steamed while still in its husk: water-soluble nutrients migrate from the silver skin into the interior of the grain and are locked in there, the starch structure firms up, and the grain takes on its typical golden shimmer. After cooking, it lightens again. The result: an extremely foolproof rice that doesn't break or become sticky even after standing for a long time, in a warming container, or when mixed with meat and sauce.

- Bring to the boil once, then cook covered over low heat for 12–15 minutes.
- Leave to rest covered for 5 minutes and fluff up with a fork. For biryani, only cook the rice to 70% and finish steaming it in the pot (dum).
